  2. 400 gr carne picada (pollo, mixta) al gusto
  3. 1 Pimiento
  4. 1/2 cebolla
  5. Vino tinto (1/4 de vaso)

  7. Pimienta
  8. Aceite de oliva
  9. Sal

  1. Abrimos el bote de tomate, y lo vertemos sobre una sartén grande. El tiempo de cocinado de la salsa es importante. A más tiempo, más concentrado saldrá la salsa.
  2. Cuando empiece a burbujear, añadimos sal, y vamos corrigiendo la acided del tomate añadiendo poco a poco azúcar. Vamos removiendo para disolver bien estos ingredientes.
  3. Una vez que ya tengamos la corrección del sabor, añadimos pimienta y nuez moscada rallada al gusto y movemos la salsa. La dejamos que se cocine a fuego suave. Sabremos que la salsa ya está cocinada porque habrá cambiado la textura de grumosa, a una textura más suave. En el olor, habremos notado que ha perdido la acided. El color habrá cambiado a un rojo más oscuro.
  4. Como el cocinado de la salsa es lento, vamos cortando el pimiento y la cebolla en trozos medianos y sofreímos en otra sartén hasta pochar.
  5. Una vez pochado el pimiento y la cebolla, incorporamos la carne picada (pollo, mixta) y lo cocinamos. Salpimentamos la carne y añadimos ralladura de nuez moscada.
  6. Una vez este la carne hecha, añadimos vino tinto y vamos removiendo hasta reducir el vino. Probamos y añadimos sal, pimienta o nuez al gusto.
  7. Cuando la salsa ya esté cocinada, mezclaremos la carne y el jugo que ha soltado, con el tomate y lo cocinaremos a fuego lento dándole vueltas para que quede todo homogéneo.
