  3. En un recipiente para picadora, introducimos los trozos de sepia junto con el huevo, el ajo, el perejil, pimienta y un poco de pan duro y batiremos hasta conseguir una pasta donde se puedan distinguir los trozos de sepia.
  4. Una vez obtenida nuestra pasta para las albóndigas les daremos forma con las manos y las pasamos por harina.
  5. Hechas nuestras albóndigas, las freiremos un poquito sin dorarlas en exceso y las reservaremos sobre un papel de cocina absorbente.
  6. En el mismo aceite que hemos usado para freír las albondigas pondremos a pochar la cebolla a fuego lento.
    Las albóndigas habrán dejado restos de harina que servirán para dar consistencia y cuerpo a la salsa.
  7. Añadimos el fumet de pescado en el que habremos diluido el azafrán y dejamos de se cocine, reduzca y espese un poco.
  8. Incorporamos las albondigas reservadas y damos un hervor de unos 10 min removiendo de vez en cuando para que las albóndigas no se nos peguen.
  9. Serviremos sobre una camita de patatas fritas (o arroz blanco).
