- En un bol añadimos a la carne sal a gusto, orégano, pimienta y un chorro de salsa barbacoa. Y comenzamos a amasar como si se tratara de la masa para un pan. El amasado hace que la carne largue colágeno y logra que se quede bien pegada y no se desarme la bolita.



- Formamos las bolitas y vamos acomodando en una fuente y reservamos. Ahí muestro el tamaño que las hice esta vez. Salieron unas 40 albóndigas.


- En una olla con chorro de aceite caliente, añadimos el puerro picado, salteamos, agregamos el morrón y salteamos un poco más. Añadimos los tomates en gajos grandes y cocinamos un par de minutos.



- Añadimos las papas en rodajas y removemos, a los minutos añadimos la salsa de tomate y el agua. Mezclamos y añadimos las albóndigas de a una y acomodándolas bien por toda la olla. Tapamos y dejamos cocinar, vamos removiendo cada tanto.



- En cuanto las papas están cocidas que lleva entre 15 y 20 minutos, ya está listo. Apagamos el fuego y añadimos las hojas de perejil. Mezclamos y dejamos reposar tapado unos minutos antes de servir.


- Acompañamos con arroz blanco. En casa somos fanáticos del arroz y muchas comidas se acompañan así. Que disfruten!
